Description

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Brown ground beef in a large pot over medium-high heat. Drain off any excess grease.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in green bell pepper, beef broth, diced tomatoes, oregano, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
  5. Serve hot, topped with shredded cheddar cheese if desired.

Notes

  • For a thicker soup, add 1/4 teaspoon of xanthan gum while simmering.
  • You can add other low-carb vegetables like cauliflower rice or zucchini.
