- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 4 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese (optional)
Instructions
- Brown ground beef in a large pot over medium-high heat. Drain off any excess grease.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Stir in green bell pepper, beef broth, diced tomatoes, oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
- Serve hot, topped with shredded cheddar cheese if desired.
Notes
- For a thicker soup, add 1/4 teaspoon of xanthan gum while simmering.
- You can add other low-carb vegetables like cauliflower rice or zucchini.
- Store leftovers in the refrigerator for up to 3 days.
