Decadent turtle cookies featuring a chocolate caramel topping.
Ingredients

- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans
- 1 bag (11 oz) caramel bits
- 1/4 cup heavy cream
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the chocolate chips and pecans.
- Drop by rounded tablespoons onto ungreased baking sheets.
- Bake for 9-11 minutes, or until golden brown.
- While cookies are baking, prepare the caramel topping: In a saucepan, melt the caramel bits with the heavy cream over low heat, stirring constantly until smooth.
- Once the cookies are out of the oven, immediately use a spoon to make an indent in the center of each cookie.
- Fill the indentations with the melted caramel mixture.
- Let the cookies cool completely on the baking sheets before serving.
Notes
- For a richer flavor, use salted caramel bits.
- Store the cookies in an airtight container at room temperature.
- You can add a sprinkle of sea salt on top of the caramel for extra flavor.
