Description

Decadent turtle cookies featuring a chocolate caramel topping.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1 bag (11 oz) caramel bits
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the chocolate chips and pecans.
  7. Drop by rounded tablespoons onto ungreased baking sheets.
  8. Bake for 9-11 minutes, or until golden brown.
  9. While cookies are baking, prepare the caramel topping: In a saucepan, melt the caramel bits with the heavy cream over low heat, stirring constantly until smooth.
  10. Once the cookies are out of the oven, immediately use a spoon to make an indent in the center of each cookie.
  11. Fill the indentations with the melted caramel mixture.
  12. Let the cookies cool completely on the baking sheets before serving.

Notes

  • For a richer flavor, use salted caramel bits.
  • Store the cookies in an airtight container at room temperature.
  • You can add a sprinkle of sea salt on top of the caramel for extra flavor.
