Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (15 oz) container cottage cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, bell pepper, zucchini, and yellow squash. Cook until tender-crisp, about 8 minutes.
  4. Stir in diced tomatoes, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  5. Transfer vegetable mixture to a baking dish.
  6. Spread cottage cheese evenly over the vegetables.
  7. Sprinkle with mozzarella cheese.
  8. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  9. Let stand for a few minutes before serving.

Notes

  • You can use any vegetables you like in this bake.
  • For a spicier dish, add a pinch of red pepper flakes.
  • Store leftovers in the refrigerator for up to 3 days.
