- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 (15 oz) container cottage cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic, bell pepper, zucchini, and yellow squash. Cook until tender-crisp, about 8 minutes.
- Stir in diced tomatoes, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Transfer vegetable mixture to a baking dish.
- Spread cottage cheese evenly over the vegetables.
- Sprinkle with mozzarella cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- You can use any vegetables you like in this bake.
- For a spicier dish, add a pinch of red pepper flakes.
- Store leftovers in the refrigerator for up to 3 days.
