Valentine Sugar Cookie Bars are a festive treat perfect for celebrating love. These bars feature a soft, chewy cookie base topped with a sweet pink icing and colorful sprinkles.

- ½ cup sugar
- 1 stick butter
- ½ cup brown sugar
- 1 egg
- 2 cups flour
- 1 tsp baking powder
- ⅓ cup milk (add up to 2 tbsp more if mix is too dry)
- Sprinkles
- 1 stick butter (for icing)
- 3 cups powdered sugar
- ¼ cup milk (for icing)
- Pink gel coloring
Instructions
- Beat together sugars, butter, and egg.
- Gradually beat in flour and baking soda, followed by milk. Beat until your texture is thick and crumbly, then stir by hand a few times until it comes together like dough.
- Line an 8×8 inch pan with parchment and spray a light coating of nonstick, then press your cookie bar batter into it. Smooth it down using another sheet of parchment.
- Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean and edges begin to turn golden brown. Set aside to cool completely.
- Once cookie bars are cooled, beat together butter, powdered sugar, milk, and pink gel until smooth and fluffy. Generously spread out over your cookie bars, then top with sprinkles, cut into squares, and serve. You can also refrigerate for firmer/easier to cut icing.
Notes
- Refrigerating the bars after icing makes them easier to cut.
- Adjust milk in cookie dough for desired consistency.
