Description

Quick and easy veggie stir-fry with a creamy peanut sauce. A flavorful and healthy meal ready in minutes.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1/2 cup snow peas
  • 2 tbsp soy sauce
  • 2 tbsp peanut butter
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/4 cup water
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add onion and garlic and cook until softened, about 3 minutes.
  3. Add bell pepper, broccoli, and carrots and cook for 5 minutes, stirring occasionally.
  4. Add snow peas and cook for 2 more minutes.
  5. In a small bowl, whisk together soy sauce, peanut butter, honey, rice vinegar, sesame oil, and water.
  6. Pour sauce over vegetables and cook until sauce has thickened, about 2 minutes.
  7. Serve over cooked rice.

Notes

  • Adjust vegetables based on your preference.
  • Add a pinch of red pepper flakes for extra spice.
  • Garnish with sesame seeds or chopped peanuts.
