- 1 tbsp olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1/2 cup snow peas
- 2 tbsp soy sauce
- 2 tbsp peanut butter
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/4 cup water
- Cooked rice, for serving
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add onion and garlic and cook until softened, about 3 minutes.
- Add bell pepper, broccoli, and carrots and cook for 5 minutes, stirring occasionally.
- Add snow peas and cook for 2 more minutes.
- In a small bowl, whisk together soy sauce, peanut butter, honey, rice vinegar, sesame oil, and water.
- Pour sauce over vegetables and cook until sauce has thickened, about 2 minutes.
- Serve over cooked rice.
Notes
- Adjust vegetables based on your preference.
- Add a pinch of red pepper flakes for extra spice.
- Garnish with sesame seeds or chopped peanuts.
