Description

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon smoked paprika
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (15-ounce) can pumpkin puree
  • 4 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. In a large pot or Dutch oven, brown the ground turkey over medium-high heat. Drain any excess fat.
  2. Add olive oil, onion, garlic, and bell pepper to the pot. Cook until softened, about 5 minutes.
  3. Stir in chili powder, cumin, cayenne pepper, and smoked paprika. Cook for 1 minute more.
  4. Add cannellini beans, pumpkin puree, chicken broth, and diced tomatoes to the pot. Bring to a boil, then reduce heat and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Serve hot with your favorite toppings.

Notes

  • Adjust the amount of cayenne pepper to control the level of spiciness.
  • For a thicker chili, mash some of the beans before adding them to the pot.
  • Chili tastes even better the next day, as the flavors have had time to meld.
